The Rainbow Inn at Cooksbridge, formerly operated by celebrity chef Marco Pierre White, is now back in local ownership.
The historic country pub and restaurant has been taken on by Sussex duo Paul Day and Lewis Robinson.
Leisure property specialist Fleurets marketed the leasehold of the venue at an asking price of £95,000.
The new operators said: “The emphasis will be very much on simple, quality dining based on classic pub staples with some more adventurous offerings.
“We want to maintain the ‘country inn’ atmosphere of The Rainbow and drinkers in the bar areas will be made to feel very welcome at all times.”
They added: “Teas, coffees, sandwiches and ‘bar nibbles’ will also feature for those not wanting more substantial meals. Children will be welcome, as will dogs [on leads] in the bar areas.”
After just a couple of days’ closure for essential repairs and maintenance, the venuet has returned to seven-day opening. Food suppliers are mostly businesses local to the area and the bar is stocked with Sussex beers from Harveys, the Long Man Brewery and Hepworths of Horsham.
Work is already under way to enhance the gardens at the rear of The Rainbow Inn and the spring and summer months will see weekend barbecues and a marquee for quieter private functions.
