Acclaimed London chef to open new restaurant in Lewes

A London chef who has worked at Michelin-starred restaurants is set to open his first solo venture in Lewes.

Fork will open its doors at 14 Station Street, Lewes on June 1.

Its head-chef and co-owner Richard Falk previously worked at the two-Michelin-starred The Ledbury in Notting Hill and then as head chef at Clapham restaurant, The Dairy.

He said: “It’s been a long-held ambition to move out of London with my family and open my own restaurant.

“Fork will give me a chance to create dishes made from seasonal ingredients from the best growers and producers in East Sussex.

“We have had a hugely positive response from the local community.

“People are now really wanting more places now to eat and drink together.

“Lewes is also renowned for its tradition of radicalism and independent spirit and this really works well with the ethos of Fork.”

He said Fork’s menu would be both ‘innovative and accessible’ – a modern interpretation of a traditional neighbourhood restaurant menu serving modern British cuisine.

Lunch will include staples like Trenchmore flank, salsa verde and smoked bone marrow on toasted milk bread, warm salad of Namayasai beetroot, chickweed and black garlic, and lady grey custard tart.

Dinner will be a changing menu of both small and large plates, alongside a beer, wine and cocktail list featuring brewers and producers from Sussex.

Newhaven cod, spring cabbage, garden sorrel cooked with Beak brewery Lulla will sit alongside charcuterie from Hove producers Rebel, cheese from Golden Cross and a warm compote of fruit from the nearby Offham nursery to finish.

On Saturday and Sunday, brunch will bring together classic brunch dishes, middle eastern dishes and whole animal butchery.

Starters will range in price from £3.50 to £9.

Small plates will start at £4, and large at £8.

The interior of the restaurant features vintage Vico Magistretti chairs and modern oak joinery.

Co-owner Stephen Yeomans said: “We wanted to create an interior that felt both classically cool but also welcoming and intimate.”

The restaurant also has a courtyard terrace and garden.

Fork will open on June 1 for casual drinks, relaxed dinners and weekend brunches.

There will be eight seats available at the bar for walk ins, where there will be no booking required.
