Jason Walls, 40, and Kate Mitchell, 39, are set to open The Whiskey Rooms in Montague Street on April 18, and are looking forward to ‘offering something different’.

Kate said: “We have both been overwhelmed by the response we have had – it has been really positive. It just shows that people need something fresh.

“It is incredibly exciting – it feels real now. It had always been an idea but now it has become a reality.”

Jason said he and Kate came up with the business venture idea a year ago after working in pubs for a long time. He said they were pleased to be opening in Montague Street. “It is an up and coming part of the town,” he said, adding: “It has some great places already.

“We are looking forward to offering something different. Over the past five years it has been all about gin, and wine bars, but whisky has been going on for 200 years – it is not a drink that goes out of fashion.”

The Whiskey Rooms will offer whisky from around the world, Jason said, as well as an eclectic range of fine wines, cider, spirits and cocktails to suit all palates, including gluten free and a non-alcoholic range.

There will also be premium draught lager and real ale straight from the cask, as well as tapas and platters for those looking for a bite to eat.

Jason, who has worked in pubs and restaurants for 20 years, said the bar, which will be open to only over 21s, will offer a place to sit and relax.

He said: “The feel of the bar is very rustic, like an old working men’s club – with dark woods.

“Everyone is welcome, we like to say we are inclusive. There is room for 48 people – it is about quality, not quantity.”

At the grand opening there will be a live Gramophone DJ, and tasting sessions.
