RECIPE: Tagliata Manzo for Valentine’s Day

Maurice Maffeo, Head Development Chef for Strada Horsham, recommends a dish if you’re trying to impress that special someone this Valentine’s Day.

TAGLIATA MANZO

2 Sirloin Steak about 7oz

60g Rocket Washed

40g Spinach Washed

1 Tomato

12 Green Beans

40g Parmesan Shaved

1 Pinch Salt

1 Twist Milled Black Pepper

1tsp extra virgin olive oil to drizzle

Dressing:

2 dsp extra virgin olive oil

1 tsp balsamic vinegar

Pinch salt

Preparation:

Cut fat and sinew from steak, marinade with rosemary and oil, cover and refrigerate

Trim and cook beans in salted water for 5 minutes, drain and cool

Wash tomato and cut into 8

Drain steak from marinade, season on both sides with salt and pepper and cook on hot grill or pan.

Remove steak once cooked to your liking and rest somewhere warm

In a mixing bowl combine salads, tomato, beans and dressing, toss together

Slice steak on an angle and serve on an oval plate if possible

Add Parmesan shavings to the salad before serving

Drizzle olive oil over the sliced steak

Key points:

Do not dress salad too early

Rest the meat before slicing
