If you go down to the woods (near Lewes) today, you’re sure of a big surprise.

A new treehouse was officially ‘launched’ by the team behind the professional foraging and wild food organisation: Hunter Gather Cook.

The group is the brainchild of Nick Weston, 32, from Beddingham.

In 2008 Nick was chosen as survival expert for the Channel Four series ‘Shipwrecked’ when he spent three months in the Cook Islands teaching competitors the rudiments of wild living: how to make fires, build shelters, hunt, fish and gather food.

The programme saw teams compete against each other, vote to banish one member to a third island and the winning team was the one which closed with the most members.

Nick then lived his own dream of self sufficiency by building his first tree house near Ardingly and wrote a book: ‘The Tree House Diaries; How to Live Wild in the Woods’ .

He now produces a blog, lectures, broadcasts and writes for newspapers and magazines about all things wild. His articles have appeared in Reader’s Digest, The Times, The Guardian, The Daily Telegraph, The Independent and Living Woods, Outdoor Adventure Guide and Backwoods magazine in the USA.

Hunter Gather Cook was established in March 2011 with the construction of the HQ. Nick’s vision was to create a ‘Hunter-Gatherer’ school that blended a mixture of foraging, animal butchery, cooking and bushcraft with an emphasis in living comfortably in the great outdoors and creating high-end dishes using wild produce.

His newly created tree-house on a 40 acre farm, high in the tree canopy, has a birch frame, oak tables and benches and food is cooked in a sandstone kitchen and clay oven dug from stream beds at the wood’s edge. It’s the focus for courses including spring and autumn fungal forays, corporate and team building events, fishing, home brewing and wild cocktails, butchery, private, family and children’s courses aimed at teaching people to become 21st century hunter-gatherers - but also to have fun.

At Saturday’s formal opening, clients, friends and family gathered around outdoor log fires and a barbecue while Nick served a variety of snacks washed down with wild cocktails. To find out more visit:
