Catering students' pizza the action

The Year 11 girls, who are all studying GCSE Catering, had a tour of the restaurant kitchens and learnt all about how a pizza is delivered to the table, from start to finish.

The staff at Strada were very welcoming. Head chef Santo demonstrated the health and safety aspects of a working kitchen and how they meet all the environmental health regulations. Then following instructions from sous chef Nuno and assisted by waiter Dinart, the students all made a margherita pizza. They used the tried and tested method for all pizzas served to customers at Strada. They had to form and shape the dough by hand and add tomato sauce and grated cheese. The pizzas were then cooked and packed up in takeaway boxes for the girls to take back to school for lunch. Needless to say most of the pizzas didn’t make it to lunchtime.

Anita Charman, general manager of Strada, Horsham, said: “Here at Strada we are keen to get involved in our local community. We approached some of the local schools to invite them to a session run by us free of charge to engage the children in the working life of running a restaurant.

“All the girls from Millais School were a pleasure to have with us and all enjoyed getting stuck into making pizzas and being shown behind the scenes of our restaurant. We have some more schools booked in and hope to have many more into the new year.”

Lynn Atherley, assistant director of Learning at Millais, said: “We are really grateful to Strada for accommodating the students in this way. The current Catering GCSE is focused on the restaurant industry and includes health and safety aspects in a working kitchen to the final product being delivered to the customer.

“This was an ideal way to embed this knowledge in a very practical way. The girls had a great time and being able to make (and eat) a pizza was the icing on the cake!”
