"We try to offer fresh ingredients. For our smash burgers it’s 100% pure British beef, 40 day dry aged, the cattle has been grass fed as well, giving maximum protein. We're giving quality to our customers, and the same with our chicken, it's red tractor approved, ethically sourced, so it's good quality organic chicken.
With our burger buns, they're baked fresh in London and get delivered to us 6am-7am, so we're trying to give something which is fresh, and full of good nutrients, because burgers and fast food generally is considered unhealthy, but if we can add more quality ingredients. Our chips too aren't a fast food taste, it's the quality focus, rather than a quick service.”
He said “We're trying to build a local diner inspired by the American fast food scene, that's why we've got fifty seats here, and the booths are designed for families. Our primary dishes are burgers, but we also do flavoured wings, and flame grilled chicken, they are our three key dishes. Very soon we'll start doing milkshakes, waffles and cakes on a seperate desert menu.
It takes time to build trust with people on taste, because the beef we use is so full of protein, the real burger eaters will be able to taste the difference straight away, and this is actually quality food."
"We have four types of burgers. In the beef burger range we have the smash burger, which is made of fresh mince, which is literally smashed onto the hot plate, burning at 250 degrees. That caramelises the bottom layer, and holds all the juices of the beef, as opposed to a big chunky beef patty which is full of water and protein.
Each smash burger has two patties by default, they're both 100 grams each, that's our signature burger, and has a fresh sesame seeded bun, grilled onions, dill pickles, tomato sauce and mustard. Then we have the standard cheese burgers, people can have it single, double or triple, we use a slightly different cut of beef for these, not as premium as the smash burger, but still very premium, and sourced by a trusted supplier.
The chicken range we have a fried chicken burger, and we also have a flame grilled peri peri chicken breast, made with we use south Indian spices mixed with Portugese spices, so it gives you a bit more of a kick. The customer can choose to have it mild, spicy, extra spicy, or lemon and herb.
They are our four prominent hero burgers, and out of the four the smash burger is our speciality. All burgers can be customised when ordering.”
Their most popular burger is the smash burger, and Umais says "it's because it's premium, and it's quite trendy as well, and those that have had it, they prefer it over a normal traditional burger, simply because of the cooking style, and the caramelised beef gives it a unique taste."
Well, after that description I just had to give it a go, well it would be foolish not to! So I tried one of their gorgeous smash burgers. It was a double beef patty (200 grams) with American cheese, grilled onions, dill pickles, tomato sauce and mustard as standard, although Umais said they’re always happy to customise your smash burger if you'd rather leave out some of the ingredients.
I must say it was an amazing experience, I've never had a caramelised burger, and the flavours were incredible. The combination of high-quality beef, onions and dill created a succulent, juicy, and very satisfying taste. The sesame bun was clearly fresh and soft, and added to the experience. I would definitely class this as a premium burger, just biting into it your taste buds are overwhelmed, and you can’t wait for the next bite. It’s also fair to say it’s a good size burger and bun, and pound for pound, it stacks up very well against some of larger burger businesses, and to my mind I would definitely have a Big Boys Burgers smash burger every time.
Umais went on to tell me about the other options they have. “With the fried wings, we can now offer buffalo spicy, mango habanero and barbeque flavours.
Vege patty burgers and halloumi falafel wraps, and a choice of kids menu’s too.”
Umais said that on their “Opening day (12th March) the guys working at the diner weren't expecting the love that they had, more than four hundred people turned up, which is amazing. But because the kitchen was new, and they hadn't had time to establish a flow, and unfortunately a few people left unhappy. We hold our hands up. We've tightened up our operation now. We would like to say to say sorry to those people that did come on day one and were unhappy, that's not the service that we live by, or the standard we want to give. If they can show us the receipt from day one, we will give them a free replacement, in the way we intended.”
If you’d like to give their smash burger a go for yourself, or order anything else you can do it instore, call and collect, or by Ubereats, Deliveroo and Justeat.
Big Boys Burgers is open 11am-11pm seven days a week
