An EBC spokesperson said: “Shoes Simes has a long track record of success in the Eastbourne hospitality sector and has now set her sights on transforming the well-known Pavilion Cafe and Redoubt gardens.

“Following a competitive tendering process, councillors agreed that the plans submitted, including the rebranding of the Pavilion to the ‘Glass House’, showed ambition and flair that will ‘unleash the full potential of the site’.”

Ms Simes said: “As a local businesswoman and Redoubt resident, it is very exciting to work with EBC to update and showcase this much-loved building.

"I am delighted for the opportunity to deliver an exceptional new cafe, bar and restaurant on Eastbourne's seafront.”

Councillor Alan Shuttleworth, acting chair of the strategic property board, said: “I think I speak for everyone on the strategic property board when I say that the plans put forward by Shoes and her team are exactly what we hoped for.

"I was certainly blown away by the really exciting vision she has for the new ‘Glass House’ and am confident that the plans will unleash the full potential of the site.”

Having purchased the Dew Drop Inn in 2007, The Eagle in 2009 and The Rainbow in 2019, Ms Simes has experience and knowledge of the Eastbourne market.

Councillor Robert Smart, leader of the opposition group at EBC, said: “The old Pavilion cafe occupies a landmark site on the seafront and so it was essential that we identified someone with standout credentials in the hospitality industry and in Shoes Simes I believe we have done that.

"Under her stewardship the ‘Glass House’ will, I am sure, prove as popular a venue as has the neighbouring Beach Deck and Bistro Pierre at the Wish Tower.”
